Habitual is the most contemporary, vibrant and Mediterranean side to Ricard Camarena. A garden whose DNA can be found in the traditions of the huerta, the local market gardens around Valencia, and its fresh vegetables and pulses, as well as locally-sourced fish and meat.
Light, joy and colour come together in a vibrant cuisine that celebrates the beauty of the land, the sun and our local agriculture, expressed in dishes that remain true to their origin and their fresh produce (here they taste as they should, as they really are) and honestly convey all their wealth and flavour.

Here at Habitual, fresh produce is given pride of place thanks to our close contact with a group of local producers; our market gardens are located in Mahuella, a village on the outskirts of Valencia, and provide everything needed for an enjoyable, satisfying cuisine that captures the joy and vibrancy of the place, with dishes full of flavour as unique as the character of the farmers who make them possible.
Dishes that speak of who we are, like the preserved artichokes with marinated greater amberjack and almonds, roast aubergine with hollandaise sauce, or the crispy Galician beef carpaccio with rocket.
